Recipes | Tahini bread


  • 1 kg flour
  • 2 glasses of lukewarm water
  • 35 gr yeast
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground mastic
  • 1 glass raisins
  • 1 glass ground walnuts
  • 1/2 glass sugar
  • 1 glass sesame seeds
  • 1/2 glass Tahini

Mix the flour, cinnamon, sugar and mastic. Dissolve the yeast in the lukewarm water, pour it in the flour mix and knead folding in tahini until the dough becomes soft. Let the dough rest, add the raisins and walnuts and knead again. Divide the dough into round loaves of 50 gr, form into ball, brush sugar water and sprinkle sesame seeds. Scratch a star-like-shape on top of each loaf and let increase its volume. Bake for 30 minutes at 200oC.
