Recipes | Sesame rusks

 

  • 250 ml virgin sesame oil
  • 250 ml orange juice
  • 200 gr sugar
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • cinnamon and clove (at taste)
  • 850 gr flour
  • 50 gr sesame flour
  • sesame seeds
 
     

Sift the flour and mix it with the sesame flour, baking powder, soda, cinnamon, clove and sugar. Knead adding sesame oil and the orange juice until the dough becomes soft. Add more flour if needed. Divide the dough into 12 equal round loaves. Roll out each loaf until they get thin and a round shape, approximately 30 centimeters long. Roll them over hulled sesame seeds. Place the rolls on a sesame oil greased pan and bake them at 180oC for 20 minutes.

As soon as they cool, slice the rolls diagonically into 1 centimeter thick slices and bake them again at low temperature until they dry well and become very crispy.

They last for at least 15 days if kept in a dry place.
